Instructions
- Add the chicken, Shaoxing wine, salt and cornstarch in a medium-sized bowl. Mix well until the chicken is evenly coated. Set aside to marinate.
- In your Instant Pot, combine the rice, Shaoxing wine, and ginger.
- Add 1L of water and place the chicken cube.
- Set the Instant Pot to cook at high pressure for 15 minutes.
- Once cooking is complete, allow the pressure to release naturally for at least 10 minutes. Afterward, carefully release any remaining pressure quickly.
- Add the marinated chicken, green onion, and chicken broth to the cooked congee in the Instant Pot.
- Set the saute function on the Instant Pot.
- Stir constantly to separate the chicken pieces and cook until the chicken just turns white.
- Stir in the sesame oil to blend it well with the congee and chicken.
- Serve the congee hot.
