Chicken Bao Buns

Ingredients
- 500 g Chicken Thigh
- 1 tbsp Dark Soy
- 1 Onion
- 5 cloves garlic
- 1 thumb Ginger
- 1 cinnamon stick
- star anise
- Cloves
- 1/4 cup Dark Soy
- 2 tbsp Light Soy
- 1 tbsp five-spice powder
- 1/2 tsp White Pepper
- Salt
- 1 tbsp Sugar
- 500 ml Stock

Instructions
- Set instant pot to saute mode.
- Saute the onion, garlic, and ginger until fragrant.
- Add in the chicken and sear.
- Add the cloves, star anise, cinnamon stick, and 5 spice powder and cook for a bit.
- Add the dark soy sauce, light soy sauce, salt, sugar, and stock then set instant pot to pressure cook on high pressure for 9 minutes.
- Do a quick release and then remove the chicken from the pot, leaving the sauce.
- Add in corn starch slurry to thicken and put the trivet on your lotus buns.
- Set instant pot to steam mode for 2 minutes
- Do quick release. Remove buns and return the chicken to coat with sauce.
- Assemble the buns with lettuce, chicken, and parsley, and enjoy!
